Collect even more version numbers in docker/defaults/main.yml

I have just kept to using quotes since there is the odd case of having to quote strings which start with a variable. But removing quotes doesn't rub me the wrong way :)

Element.data.coop suggests logging in at matrix.data.coop

It works for me using matrix.data.coop. It is the public_baseurl0 of our server, not to be confused with server_name[1]
